Alfajor with Santa Helena Peanut Butter

125g butter
75g sugar
150g cornstarch
100g wheat flour
2 egg yolks
2g baking soda
Santa Helena Peanut Butter (to taste)
Santa Helena Roasted and Granulated Peanuts
TIP
Shredded Coconut (to taste)
MODO DE PREPARO:
Let’s go! The first step is to mix the sugar and butter in a bowl and stir until you get a very creamy mixture.
Place the yolks and blend some more. Add the flour, the cornstarch and the bicarbonate and stir a little more.
Now, pour this dough onto a flat, floured surface.
Knead the dough gently and then stretch with a floured roller and cut in circles.
Grease a baking tray with butter, put on baking paper and settle the circles.
Then, take to the oven at 200ºC for 10/15 minutes.
Finally, just put the Santa Helena Peanut Butter in the center of the circle and put another one on top (like a sandwich). It looks irresistible!
